This time with a short chronicle of artists\u2019 restaurants, from Daniel Spoerri to Jennifer Rubell.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/section>\n\n<section class='wp-block-ho-pattern toggle-optional-headline show-optional-headline' data-pattern='ho\/text-magazin-related-artikel'>\n\n<div  class='container-fluid margin-bottom-7'>\n\n<div  class='row ho-pattern-optional-headline'>\n\n<div  class='col col-xs-12 padding-bottom-3'>\n<h4 class='ho-sd-mag-h3' style=\"white-space: normal;\">Daniel Spoerri serves up 125 grams of bread<\/h4>\n<\/div>\n<\/div>\n\n\n\n\n<div  class='row'>\n\n<div  class='col col-xs-12 col-md-6'>\t<p class='ho-sd-body'>In early March 1963, Galerie J in Paris exhib\u00adited a collec\u00adtion of 723 kitchen uten\u00adsils, from a meat grinder, or a potato peeler through to a cheese grater, it featured them all. Swiss artist <a href=\"https:\/\/www.schirn.de\/en\/schirnmag\/from-studio-to-dining-table-daniel-spoerri-whats-cooking-en\/\" data-type=\"magazin-artikel\" data-id=\"8876\">Daniel Spoerri<\/a> had collected them and mounted them on boards. He is co-founder of the Nouveau R\u00e9alisme move\u00adment and inventor of \u201cEat Art\u201d, which describes an artistic approach to every\u00adthing that is edible. As was customary, the gallery closed its doors at 7 p.m., albeit only for Spoerri to open them again an hour later to take the stage as \u201cle Chef Spoerri Daniel\u201d and lead his guests to a tempo\u00adrary restau\u00adrant. Over the course of ten days, each evening the artist donned his apron and cooked for ten guests each time: The themed menu varied and included \u201cFranco-Ni\u00e7ois\u201d (with pastis and Rocky Moun\u00adtain oysters in cream) and a \u201cprison menu\u201d (thin cabbage soup and 125 grams of bread). He hired art critics to wait at table, as they usually worked as the inter\u00adme\u00addi\u00adaries between the (eat) art and the public. Some years later, Spoerri opened a \u201cgenuine\u201d restau\u00adrant in D\u00fcssel\u00addorf and served not only steaks but also python schnitzel, ant omelets and snake ragout, with the inten\u00adtion of expanding his guests tastes. However, he no longer stood at the hob himself, but only acted concep\u00adtu\u00adally. As an artist, the idea of donning the role of running a restau\u00adrant fitted perfectly into this age of artistic upheaval. In 1969, two restau\u00adrants based on this prin\u00adciple opened in the United States: Allen Ruppers\u00adberg\u2019s \u201cAl\u2019s Caf\u00e9\u201d in Los Angeles and Les Levine\u2019s \u201cLevine\u2019s Restau\u00adrant\u201d in New York. Al\u2019s Caf\u00e9 opened on Thursday evenings and resem\u00adbled a classic Amer\u00adican diner, although a glance at the menu revealed many a hard-to-digest meal such as \u201cthree rocks with a scrunched up piece of paper\u201d, \u201cfilet of tree bark\u201d or \u201ccotton with star\u00addust\u201d, an ironic allu\u00adsion to the Land Art move\u00adment evolving at the time. After an order was placed, Ruppers\u00adberg then prepared these sculp\u00adtural meals and served them; guests consumed them at their own risk. He called the project an \u201cauto\u00adbi\u00ado\u00adgraph\u00adical culi\u00adnary envi\u00adron\u00adment\u201d, the table\u00adcloths were bright green, and dishes such as \u201cHalifax salmon steak\u201d, \u201cdiced chicken liver Levine\u201d or \u201cmatzo dumpling soup\u201d were served. Art critic David Bourdon deemed the food \u201cdeplorable\u201d and the lighting \u201csomber\u201d but at least the prices are said to have been modest, and anyone sharing Levine\u2019s name got a 20-percent discount. The artist wanted to create a relaxed, pleasant ambi\u00adence, but he also installed five surveil\u00adlance cameras and screened the footage in real time on several moni\u00adtors that were spread around the room. Whether this was the reason why \u201cNew York\u2019s only Cana\u00addian Restau\u00adrant\u201d, so the adverts, was never a big splash is not known. It was run entirely by artists and was the only eatery in the district that offered healthy, sustain\u00adable, and afford\u00adable food; within a short space of time, the restau\u00adrant had become highly popular and a central meeting place for the creative scene. Matta-Clark orga\u00adnized regular perfor\u00admances there, such as his \u201cBone Dinner\u201d, during which he served oxtail soup, followed by roasted marrow\u00adbone dumplings and frog\u2019s legs. At the end of each evening, each guest was given a neck\u00adlace made from the bones left on the plates. Thai artist <a href=\"https:\/\/www.schirn.de\/en\/schirnmag\/from-studio-to-dining-table-rirkrit-tiravanija-whats-cooking-en\/\" data-type=\"magazin-artikel\" data-id=\"9187\">Rirkrit Tira\u00advanija<\/a> is consid\u00adered one of the main propo\u00adnents of this move\u00adment: In 1990, for the purposes of a tempo\u00adrary exhi\u00adbi\u00adtion he trans\u00adformed the Paula Allen Gallery rooms in New York into a pop-up kitchen where he served Pad Thai that he proceeded to cook himself. Some people are said to have thought Tira\u00advanija was a caterer, which he was prob\u00adably quite happy with because it was not his person, but the inter\u00adac\u00adtion between the visi\u00adtors that was supposed to take pride of place. Since this first pioneering action, Tira\u00advanija has repeat\u00adedly staged partic\u00adi\u00adpa\u00adtory works in which food and hospi\u00adtality play a central role. In 2015, he set up a communal outdoor restau\u00adrant made of bamboo (\u201cWe Dream Under the Same Sky\u201d) in front of the entrance to the Art Basel fair, where visi\u00adtors were invited to pay for their meal and bever\u00adages (there was herbal tea from his own garden and Thai curry) by helping cook, serve, and wash the dishes. From 2002 to 2018, each year on the occa\u00adsion of the opening week of Art Basel Miami Bech the US concept artist and daughter of famed collector couple Mera and Don Rubell invited everyone to a monu\u00admental break\u00adfast in the court\u00adyard of the Rubell Family Collec\u00adtion. Rubell opted for a classic menu: Some\u00adtimes there were hard-boiled eggs, crois\u00adsants, and bacon; other times porridge with raisins; or yoghurt; or Danish pastries, donuts or bread with butter and salt. The way the food was served was anything but conven\u00adtional. Part instal\u00adla\u00adtion, part inter\u00adac\u00adtive food perfor\u00admance, in \u201cFaith\u201d, 1,573 pastries were balanced on a giant seesaw; in \u201c50 Cakes\u201d, the Rubells spoonfed their guests by hand with choco\u00adlate, vanilla, and straw\u00adberry cake; at \u201cJust Right\u201d, the public was left completely to its own devices. Borrowing from the fairy\u00adtale of Goldilocks and the Three Bears, you had to clamber through a hole in the fence into a derelict house, grab a bowl and spoon from two huge heaps, serve your\u00adself porridge from huge, steaming pots, and grab a sachet of sugar, a box of raisins and then get some milk from one of the large fridges.<br><br>Rubell, who is also a trained cook, initially rejected the idea of defining her brunch instal\u00adla\u00adtions as art. However, the partic\u00adi\u00adpants in the food perfor\u00admances constantly enquired after the name of the artist behind the events and in 2009 the influ\u00aden\u00adtial art critic at the \u201cNew York Times\u201d Roberta Smith labeled a contri\u00adbu\u00adtion Rubell made to Performa 09 as a \u201csuccessful melding of instal\u00adla\u00adtion art, happening and perfor\u00admance\u201d. In 2019, for the Insti\u00adtute for Contem\u00adpo\u00adrary Art (ICA) in London he designed a sake bar that func\u00adtions to this day and is attached to the gallery\u2019s caf\u00e9. Equipped with communal tables, paper lamps, and ceramic table\u00adware manu\u00adfac\u00adtured in his studio in Chiang Mai, Thai\u00adland, initially nothing indi\u00adcates that the bar is an artwork, and the artist\u2019s name also does not crop up anywhere. People eat, drink, and talk as if in any other normal bar.<br><br>Yet once, step\u00adping in someone may have stopped for a moment in front of the small printed card on the wall \u2013 \u201cUnti\u00adtled 2019 (The form of the flower is unknown to the seed)\u201d \u2013 and have asked them\u00adselves whether this is still art or actu\u00adally a restau\u00adrant, to which Tira\u00advanija would no doubt answer: Who cares?
